Hummus Pita Pizza


Preheat oven to 400 degrees.  Place one whole wheat pita on a cookie sheet.  Spread hummus (flavor of your choice) all over the pita.  Slice a small Roma tomato and spread over top.  Sprinkle a small handful of feta cheese over pizza.  Bake for 10-15 minutes or until pizza is warm and a little crispy.  Top with a handful of spinach and a drizzle of olive oil.  Variations: basically, add whatever veggies you have on hand—olives, red peppers,artichokes, onions are great additions, as are pine nuts if you have them.
